Adam's Cuisine de Success!
Congratulations to Adam Morrison (11M) who impressed the judges at the All Ireland Final of Rotary Young Chef of the Year Award 2016, held in Dublin on Saturday.
In order to compete at the All Ireland finals, Adam had been successful at the regional heat in Belfast held at the end of February. He has now been crowned All Ireland Young Chef of the Year 2016. Adam will now travel to Leicester in April to compete at the GB and Ireland National Finals.
His menu consisted of:
Cream of Pea and Asparagus Soup
Served with Mini Irish - Italian Parmesan infused Soda Bread & Abernethy Butter
Fennel and Herb crusted Glenarm Organic Salmon Fillet
Served on a bed of locally sourced Comber Purple Kale and Purple-Sprouting Broccoli with a Horseradish crème fraiche, Balsamic-glazed Vine-Roasted Tomatoes and Comber fondant potatoes finished with a drizzle of Broighter Gold Rapeseed Oil
Luscious Lemon Cheesecake
Served with glazed raspberries, mini meringues and a raspberry coulis
